l'Auberge des Gallant celebrates regional cuisine through the
creative use of regional flavours, including venison, lamb,
cheese, maple syrup and farm-fresh produce and herbs. The
excellent wine list is cited for its broad offering of varieties
from Canada and around the world. During the spring maple syrup
season, guests travel from far and wide to enjoy authentic
Quebecois country cooking in the Gallant maple pavilion, when
maple syrup is highlighted in a variety of hearty dishes served in
the sugar bush.
